How We Brewed A Low Carb Hazy w/ Ambush Brewing

Join us for an exciting collaboration brew day at Ambush Brewing in Canberra, where we craft a low-carb Hazy Pale Ale using locally sourced ingredients. From milling the grain to fermentation, we take you through the entire brewing process with insights from experienced brewers.

🌾 Selecting Ingredients for a Local Brew

We’re keeping it local! Our recipe features:
Voyager Malts – Premium Australian malt for a smooth base.
Centennial & Victoria Hops – Sourced from Ryefield Hops, adding citrus & floral aromas.

⚙️ The Brewing Process: Step by Step

🔨 Milling the Grain

We discuss how adjusting the roller gap in the mill affects grain crush and overall efficiency. A fine balance is key—too powdery, and you’ll get a stuck mash; too coarse, and you’ll lose efficiency.

🏺 Mashing & Sparging

The mash temperature is carefully controlled between 66-67°C to optimise sugar extraction. We later sparge at 75°C to rinse the grains, ensuring maximum fermentable sugars for our low-carb hazy beer.

♨️ Boiling & Hopping

After mashing, we transfer the wort to the boil kettle and start the hop additions. The hop schedule is carefully planned to create a balanced bitterness and juicy aroma without overpowering the brew.

🧪 Fermentation & Yeast Pitching

We use BRY-97 yeast, known for its high attenuation and clean fermentation profile. The yeast is carefully pitched, and a spunding valve is used to naturally carbonate the beer while keeping fermentation under control.

🌱 Sustainability: Giving Back with Spent Grain

In an effort to be environmentally friendly, we donate our spent grain to Mitchell Community Gardens, where it’s used as fertiliser. A great way to reduce waste and support local growers!

🍺 Tasting Expectations & What’s Next

The final gravity is expected to hit around 1.007, keeping the beer light and low-carb. With an estimated ABV of 4.6-4.7%, this brew is designed to be crushable, refreshing, and full of flavour.
