About the Brews
1. Hive: Post Brood 2020 Blend #1
Wildflower Post-Brood 2020 is a remarkable Wild Ale refermented with post-brood honeycomb, which imparts a deeper, richer flavour than regular honeycomb. After almost 5 years of careful cellaring, this beer has developed into a deeply complex brew, with delicate floral esters and nutty honey notes adding layers of sophistication.
The extended aging has allowed the sweetness to evolve, blending beautifully with tropical flavours like mandarin and tangerine. Paired with whipped mushroom and artichoke mascarpone, the savoury elements complement the honey's richness, making this a perfect balance of sweet and savoury.
2. Wattle Drops 2020
Wattle Drops 2020 is a golden Australian Wild Ale that has been carefully cellared to a unique stage of full-bodied complex flavour. Fermented using wild yeast and bacteria from freshly picked Wattle blossoms from ‘Carawatha’ in Gerringong, NSW, this beer showcases the essence of the blossoms. Over the years, it has developed sweet stonefruit and ripe orange citrus flavors, compact but intense, with a refreshing finish of nectarine skin and fuzz, balanced by a pithy and mildly acidic edge.
While not excessively funky, its wild ale characteristics shine through, making it a perfect pairing for a salmon tartare, where the floral and citrus notes complement each other beautifully. Wattle Drops 2020 is now in its prime, offering a truly unique and refreshing tasting experience.
3. Gold Blend 2021 Blend #32
Gold Blend 2021 Blend #32 is a rare and carefully cellared beer, unavailable anywhere else, having been aged for 3 to 4 years to develop its distinct character. It’s a four-barrel blend of golden ales aged between eleven and thirteen months, offering immediate sweetness on the nose, alongside citrus, vanilla, and a deep, brooding spice.
The complex palate features vibrant, juicy citrus, seamlessly transitioning from fruit to oak and a subtle funk. Paired perfectly with a beef tartare canapé on a potato stack, this beer promises a truly refined tasting experience.
4. St Thomas 2021
St Thomas was made by blending barrel aged amber mixed culture fermentation ale with 782kg of fresh, whole, tree ripened Morello sour cherries from Thornbrook Orchard in Nashdale, NSW.
Opening with aromas of cherries, cola and chocolate, very perfumed and heady. The palate shows fresh cherry characteristics, sweet and tart with an explosive mid palate.
Meet the Host
This event will be hosted by To All My Friends Bar Manager and certified Level 2 Cicerone, Paul Docharty.
Paul’s passion for craft beer began while studying abroad in the UK, where he lived in Bournemouth, managed cellars, and worked at various bars with companies like Greene King and The Relaxed Pub Company. During his time there, he also pursued the Cicerone Certification Program, which deepened his understanding and love for craft beer. Now, with nearly 20 years of experience in Australia’s craft beer scene, Paul continues to thrive in the industry he loves.
Event Details
With a maximum of 12 guests per sitting we are keeping it small to encourage great conversation and a deep dive into the world of wild ales. This is your chance to explore the unique profiles of these incredible cellared beers in a relaxed, engaging atmosphere.
What to Expect:
• 200ml tasting of each of the four Wildflower cellared ales
• Paired with artisanal canapés prepared by Chef T.
• Guided tasting with around 15 minutes spent on each beer, ensuring you savor every moment and flavor. The whole experience will last about ninety minutes.
Note: Guests will be drinking 800mL of high ABV beers; organise alternative transportation as you should not drive after the conclusion of the event.

Wildflower was co-founded in 2016 by brothers-in-law Topher Boehm and Chris Allen. Since opening they have remained focused on making balanced, nuanced beer that are welcoming and nourishing.
They make our beers a little differently and since the start have fermented their ales with a diversity of yeasts and bacteria collected from flowers native to NSW... hence the name *wink*.
